Menu Planning Monday - May 31st
We spent time visiting with family over the weekend, so I’m a bit behind on posting my menu plan.
Here’s what’s on the menu at our house this week:
Monday – Family Memorial Day Party - Covered Dishes: Layered Summer Bean Salad – I like serving this in a big clear pyrex bowl to show the layers. It’s healthy and makes great leftovers, if you’re lucky enough to have any left! I’m going to try altering this recipe to fit in a clear trifle bowl next time. Caprese Salad (Fresh Mozzarella, Vine Ripe Tomatoes, and Basil) Mmm…fresh ingredients, super easy to prepare, and so delicious! I love being able to use fresh basil straight from the garden.
Tuesday – Lemon Pepper Chicken Breasts, Roasted Asparagus, Roasted Herbed Sweet Potato Coins
Wednesday – Vegetable Beef Soup and Salad with Homemade Vinaigrette, Chocolate Covered Strawberries
Thursday – Wild Salmon, Veggie Lentils, Fresh Pineapple
Friday – Shredded Beef and Black Bean Burritos with Sautéed Peppers, Onions, Mushrooms, and Fresh Salsa
Saturday – Dinner at Grandma and Pappy’s House
Sunday – Annual Family BBQ hosted by my Great Aunt and Uncle – I’ll need to come up with more covered dishes. I’m thinking about making fruit kabobs, since they are always a big hit and some sort of tasty baked treat…maybe cookies or homemade ice cream?
