After celebrating my niece’s 3rd birthday and Father’s Day with both my dad and husband over the weekend, it’s time to keep it simple this week with easy and healthy dishes. Here’s what’s on the menu:
Monday – Homemade Minestrone Soup topped with Pesto and a side of Grilled Cheese Dippers
Tuesday – Caprese Salad (Fresh Mozarella, Tomato, and Basil) and Mixed Greens Salad with Homemade Vinaigrette, Strawberries
Wednesday – Vegetable Stir Fry with Tofu and Brown Rice
Thursday – Pesto Pasta Bake with Skillet Broccoli
Friday – Homemade Whole Wheat Pizza (Make Your Own Style with a Veggie Topping Bar)
Saturday – Black Bean and Spinach Quesadillas with Salsa Dipper
Sunday – Visiting with Grandparents (take fresh fruit like watermelon or triple berry salad)
