We had all kinds of excitement at our house last week including our adventures with a groundhog. I thought the excitement was winding down, only to wake up to another surprise. The groundhog hole was dug up again and I spotted another groundhog! So, here we go again…I’m hoping that this is the last groundhog in that hole!!! And that he doesn't make his way into my veggie garden.
Here’s what’s on the menu at our house:
Monday – Smoked Chicken, Smashed Red New Potatoes with Lemon, Steamed Mixed Veggies
I'm loving all the fresh herbs in my garden. I'm putting them in all sorts of dishes like this new recipe for smashed potatoes, yummy!
Tuesday – Grilled BBQ Chicken, Steamed Broccoli, Bean Salad, Fresh Pineapple
Wednesday – Big Salads loaded with Veggies, Beans, and leftover Chicken, Homemade Vinaigrette
Thursday – Farmers Market Sausage with Peppers, Onions, and Mushrooms in Marinara Sauce, Watermelon
Friday – Grilled Steaks, Sweet Potato Fries, Fava Beans (I picked these up at the farmers market over the weekend, because they looked so fresh. I have no idea how to prepare these yet…so if anyone has any suggestions let me know.)
Saturday – No Cooking - Dinner at the Grandparents House
Sunday – Family Memorial Day Party – I’ll probably take a healthy dish like fruit kabobs and perhaps a tasty dessert. I love making homemade decadent treats to share at a party. That way we get to really enjoy it without eating it all by ourselves. Since I have chocolate chips handy, I’m thinking about trying Bakerella’s Congo Bars or Brookies. Whatever you want to call them, her pictures make them look amazingly delicious! I’m sure they’ll be a big hit at the party.
