We’re cleaning out the refrigerator this week to prep for our upcoming vacation and to do a thorough scrub down of the refrigerator. Spring cleaning is definitely in full swing around here. This week I only purchased a few groceries at the Farmers Market, lots of fresh fruits and veggies. I’ll also be trying to creatively use up the leftover ham and hard boiled eggs from Easter.
Here’s what’s on the menu at our house:
Monday – Ravioli with Marinara Sauce, Roasted Veggies
Tuesday – Ham and Asparagus Frittata, Mixed Greens Salad and Homemade Vinaigrette, Fresh Pineapple
Wednesday – Grilled Chicken, Steamed Broccoli, Brown Rice, Orange Wedges
Thursday – Homemade Minestrone Soup, Mixed Greens Salad and Homemade Vinaigrette
Friday – On Vacation...Wahoo! :)
