Here’s what’s on the menu at our house:
Monday – Lemon-Herb Roasted Chicken, Tomato Lentil Cous Cous, and Steamed Broccoli
(Shred leftover chicken and make Homemade Chicken Stock)
Tuesday – Homemade Chicken Enchiladas, Chimichurri Rice, and Black Beans with Salsa
Wednesday – Homemade Chicken Noodle Soup, Mixed Greens Salad with Vinaigrette
Thursday – Mixed Vegetable Stir Fry with Tofu and Brown Rice
Friday – Grilled Bison Burgers with all the fixings, Roasted Asparagus, Baked Sweet Potato Fries
Saturday – Black Bean Lime Chili with Whole Wheat Cous Cous (Special Request from my Husband)
Sunday – Spaghetti with Meatballs, Steamed Artichokes, and Mixed Greens Salad
