Menu Planning Monday - March 15

With unexpected house guests last week, we didn’t follow an official menu plan. I sure am ready to get back into the swing of things around here with menu planning.

I’ve decided this is a great time for us to eat from the freezer and pantry to prepare quick and easy meals. You’ll also notice more fish on the menu, since my husband is not a big fan and he will be in and out the next couple weeks due to multiple business trips.

Here’s Mommy’s Little Helper and what’s on the menu at our house this week:

Monday – Fresh Pasta Dinner from Talluto’s (A rare night off from cooking! Talluto’s is located in the Italian Market in Philly, but they also have an outlet store in the suburbs that we enjoy once in a while for a tasty Italian meal. They have the absolute best fresh mozzarella salad and all their homemade pastas and sauces are worth a once in a while splurge.)
Tuesday – Wild Salmon, Lentils with Veggies
WednesdayShepherd’s Pie, Steamed Green Beans (Eating Green for St. Patty’s Day!)
Thursday – Vegetable Frittata and Salad
Friday – Macadamia Nut Crusted Mahi Mahi, Coconut Scented Brown Rice, Steamed Broccoli, Fresh Pineapple
Saturday – Homemade Whole Wheat Pizza Night served with a Side Salad
Sunday – Homemade Vegetable and Bean Soup and Mixed Greens Salad with Homemade Vinaigrette

  1. This sounds like food I could eat (and feel great about). What do you do with your lentils? I make a great lentil soup, but am clueless as to how to serve them as a side.

  2. To make lentils as a side, I just sauté finely diced onion, carrot, and celery in olive oil until tender. Add some minced garlic continuing to cook and stir for another minute. Finally add cooked lentils and a little salt and black pepper. Sometimes I add other veggies if I have them on hand.     Lentil Soup sounds yummy too. I think it’s definitely going to appear on an upcoming menu plan…thanks for the inspiration!
